For the burgers

  • 1 lb organic, grass-fed 93% lean ground beef
  • Kinder's seasoning, to taste
  • About 2 tablespoons grated Parmesan
  • Finely chopped yellow onion, for serving

For the broccoli

  • Organic broccoli, cut into florets
  • Olive oil spray
  • Salt, pepper, garlic powder, and onion powder, to taste
  • About ½ tablespoon grated Parmesan per serving

For the loaded smashed potatoes

  • About 1¼ lb baby potatoes, rinsed and patted dry
  • Olive oil spray
  • Salt, pepper, garlic powder, and onion powder, to taste
  • Grated Parmesan or light Mexican-blend cheese, for topping
  • 3 slices turkey bacon
  • Finely chopped fresh chives

Instructions

  1. Preheat the oven to 350°F convection. Arrange the potatoes on a baking sheet, lightly spray with olive oil, and season with salt, pepper, garlic powder, and onion powder. Roast for about 40 minutes, or until easily pierced with a fork.
  2. Spread the broccoli on a separate baking sheet. Lightly spray with olive oil and season with salt, pepper, garlic powder, and onion powder. Roast for 20–30 minutes, until tender and lightly browned.
  3. Once the potatoes are tender, use the flat side of a spatula to press each one into a thin smashed potato. Sprinkle with Parmesan or light Mexican-blend cheese.
  4. Broil the potatoes for approximately 3–5 minutes, watching closely, until the cheese melts and the edges are crispy.
  5. Meanwhile, divide the ground beef into 8 small balls and press into thin patties. Season both sides with Kinder's seasoning.
  6. Grill over medium-high heat for approximately 3 minutes per side, until the centers reach about 135–140°F for medium. Top with Parmesan and finely chopped yellow onion.
  7. Cook the turkey bacon in a skillet according to the package directions until crispy, then crumble.
  8. Divide the burgers, broccoli, and potatoes among four bowls. Lightly sprinkle the broccoli with Parmesan, and finish the potatoes with crumbled turkey bacon and fresh chives.
