Ingredients
- 10 oz Trader Joe's gluten-free brown rice pasta (you can use any pasta)
- 1½ lbs chicken breast, cubed
- ½ lemon (for juice)
- 2 tbsp Italian seasoning, plus 1 tbsp for the sauce
- 1 tsp salt, plus ½ tsp for the sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- Black pepper
- 2 tbsp oil from the sun-dried tomato jar, divided
- 2 cups Good Culture cottage cheese (I used full fat)
- ¾ cup chicken broth
- 3 cloves of garlic
- ½ cup freshly grated Parmesan (plus more for topping)
- ½ cup sun-dried tomatoes, chopped
- 1½ cups spinach
- Fresh basil, optional
Instructions
- Cook the pasta according to the package and drain.
- Toss chicken with 2 tbsp Italian seasoning, 1 tsp garlic powder, 1 tsp onion powder, the juice of ½ lemon, 1 tsp salt and pepper (optional: I marinated this for about 4 hours). Heat 1 tbsp tomato oil in a skillet over medium heat. Add chicken and cook through (about 3–4 minutes per side, until the internal temp is 165°F).
- Blend cottage cheese, broth, garlic cloves and remaining oil until smooth.
- Turn the skillet to low. Mix in pasta, sauce, Parmesan, tomatoes and remaining seasonings. Gently warm everything, keeping the heat low.
- Stir in spinach until wilted. Top with basil and extra Parmesan if you'd like!
