Ingredients

  • 10 oz Trader Joe's gluten-free brown rice pasta (you can use any pasta)
  • 1½ lbs chicken breast, cubed
  • ½ lemon (for juice)
  • 2 tbsp Italian seasoning, plus 1 tbsp for the sauce
  • 1 tsp salt, plus ½ tsp for the sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Black pepper
  • 2 tbsp oil from the sun-dried tomato jar, divided
  • 2 cups Good Culture cottage cheese (I used full fat)
  • ¾ cup chicken broth
  • 3 cloves of garlic
  • ½ cup freshly grated Parmesan (plus more for topping)
  • ½ cup sun-dried tomatoes, chopped
  • 1½ cups spinach
  • Fresh basil, optional

Instructions

  1. Cook the pasta according to the package and drain.
  2. Toss chicken with 2 tbsp Italian seasoning, 1 tsp garlic powder, 1 tsp onion powder, the juice of ½ lemon, 1 tsp salt and pepper (optional: I marinated this for about 4 hours). Heat 1 tbsp tomato oil in a skillet over medium heat. Add chicken and cook through (about 3–4 minutes per side, until the internal temp is 165°F).
  3. Blend cottage cheese, broth, garlic cloves and remaining oil until smooth.
  4. Turn the skillet to low. Mix in pasta, sauce, Parmesan, tomatoes and remaining seasonings. Gently warm everything, keeping the heat low.
  5. Stir in spinach until wilted. Top with basil and extra Parmesan if you'd like!
